Soda Bread
A classic soda bread recipe for a simple and delicious loaf that’s quick to make and doesn’t need rising time. We use it for snack with hummus or cream cheese, or for dipping into soup. It’s a great recipe for children to make and enjoy together. You can put your own twist on it by experimenting with different herbs and with, or without, cheese.
Ingredients
350g white self-raising flour
150g wholemeal flour
1 tsp bicarbonate of soda
2 tsp dried herbs of your choice (optional)
100g grated cheddar (optional)
500ml plain yoghurt (we use Brown Cow organic) *
135ml whole milk (we use Ivy House organic) *
Method
Preheat the oven to 180ºC
Grease and flour a 2lb loaf tin
In a large mixing bowl, combine the white and brown flour and bicarbonate of soda. Now stir in 1 tsp dried herbs and the grated cheese (if using).
Add the yoghurt and milk and mix everything into a dough.
Pour the dough into a lined bread tin and sprinkle the top with the remaining 1 tsp of herbs.
Bake for 45-50 minutes.
*For a dairy free version, replace the yoghurt and milk with:
450ml oat milk and 5 tablespoons apple cider vinegar.
